Mango Mahi-Mahi Tacos

Are you sick of all the cold weather in the Midwest? We certainly are. Escape the cold for a little while with these mouth-watering Mango Mahi-Mahi Tacos!

The tropical flavors of Mahi Mahi, Robert Rothschild Farm Mango Salsa and fresh lime give these delectable fish tacos flair. It might just help you escape from the winter blues for a little while!

Mango Mahi-Mahi Tacos

Ingredients

1 cup Flour
Salt and pepper to taste
1 tsp. Cayenne pepper
2 filets Mahi Mahi or other fish
1/4 cup Vegetable oil
10-12 Flour tortillas
Plain yogurt
Robert Rothschild Farm Mango Salsa
1 Lime
Lettuce or cabbage, shredded
Monterey Jack cheese, shredded

Instructions

Season flour with salt, pepper and cayenne pepper. Mix well. Cut Mahi Mahi filets into thin strips. Season with salt and pepper and then coat with flour. Shake off excess.

Heat oil in a frying pan. Add Mahi Mahi strips and cook until golden brown on both sides. (Helpful hint: Fish takes approximately 10 minutes per inch thickness to cook.)

To assemble, place a few slices of Mahi Mahi in a soft tortilla, spoon some plain yogurt and Mango Salsa on top of fish, then add a squeeze of lime juice and finish with shredded cabbage and cheese.
